Not my favourite recipe. I’m very much looking for things to improve it, but included here as is for now until I have a better one.
2 large Red Onions or 3 small ones (Grated or chopped very finely), watch your finger and warning this will get all in your eyes!
Oil to shallow fry (I like Coconut oil)
100g of bread crumbs (about 2 thirds of a typical British mug) Panko is good
A few splashes of milk
300g Minced Pork
300g Minced Beef
Salt and Pepper
All spice
Nutmeg
2 eggs (medium is fine)
Grate, Julienne or chop very finely the onions. Watch your fingers and warning grating will get this all in your eyes!
Soften the onions by shallow frying (I like coconut oil)
Mix in the bread crumbs with milk about the third the size of the crumbs. Let them absorb.
Mix up the bread crumb trying to avoid lumps, add the onions and WHEN COOL (I burnt my fingers) add both minced meats and mix with your hands.
Add plenty of spice and salt and pepper and mix again.
Add a couple of eggs and smoosh for the last time.
Shallow fry making sure they are cooked throughout.
Serve with Mashed Potato and either Chicken gravy with Sour cream mixed in it or Lindonberry jam from Ikea!
